Soft & Fluffy Egg-Free Allergy Pancakes (With Milk-Free Option)
If you need to remove milk, don’t miss the milk-free pancakes option in brackets. This recipe works well either way.
First, I want to tell you that without saying ANYTHING to my family, when I was testing this egg allergy pancake recipe, my daughter said,
“These pancakes are so fluffy and soft, mom”.
Let me tell you, it was music to my ears because that’s EXACTLY what I was aiming for!
Why Are These Egg-Free Allergy Pancakes So Fluffy?
The egg-free fluffiness comes from adding the buttermilk (or the vinegar to the milk-free substitute). The acidity reacts with the baking powder to lift the pancakes into a soft, pillowy cloud of goodness. No eggs are needed (or milk for that matter).
Egg-Free Pancakes That Don’t Fall Apart
One problem that a lot of baked goods have when eggs are excluded is that they fall apart.
This is not a problem with these delicious egg-free pancakes.
These egg-free pancakes are sturdy enough to stand up to a heavy drizzle of maple syrup, without being tough. There’s also no gumminess or chewiness that’s often found when you exclude eggs. You’ll have to try it to believe it!

Here’s what you’ll need to make these egg-free pancakes (the milk-free option is in brackets). This is a big recipe and will serve about 5-6 people.
Soft & Fluffy Egg-Free Pancakes (With Milk-Free Pancakes Option)
Ingredients
- 3 cups all-purpose flour
- 6 tsp baking powder
- 2 tsp salt
- 2 tbsp white sugar
- 2 1/2 cups buttermilk (or substitute with 2 tbsp white vinegar plus the remaining amount of non-dairy milk)*
- flavor mixture (choose one from the list below)
- 6 tbsp canola or avocado oil
Instructions
- Plain Egg-Free Pancakes- Mix 6 tbsp water with 2 tbsp ground flaxseed. Add 1 tsp vanilla. Let sit for 10 minutes prior to adding to the batter.
- Pumpkin Spice Egg-Free Pancakes - Mix 1/2 cup pureed pumpkin (not pumpkin pie filling) with 1 tsp cinnamon and 1/4 tsp cloves and 1/4 tsp nutmeg.
- Banana Nutmeg Egg-Free Pancakes - Mix 1/2 cup mashed bananas (about 2 bananas) with 3/4 tsp nutmeg.
- Apple Cinnamon Egg-Free Pancakes - Mix 1/2 cup applesauce with 1 tsp cinnamon.
- In a small bowl, mix your choice of flavor mixture together as per the options above.
- In a large bowl, whisk together flour, baking powder, salt, and white sugar. Make a well in the center.
- Pour buttermilk (or your favorite milk-free option mixed with vinegar), your choice of egg-free flavor, and oil into the well.
- Mix just until smooth. Don’t overmix.
- Preheat and lightly oil a non-stick frying pan or griddle. When it gets hot enough that sprinkled water dances on the surface, it’s ready for a pancake. Measure 1/4 cup of batter for each pancake onto the griddle and brown. Flip and repeat.
- Serve hot with your choice of topping. ENJOY!

*This also works with 2 tbsp of vinegar plus the rest of regular milk if you just need egg-free pancakes.

When I made the banana nutmeg egg-free pancakes, I tasted it and loved that there was a clear flavor of nutmeg, BUT, I thought it might be too much for my kids. The surprising thing was that they LOVED it too, just the way it was. So, I highly recommend trying these spice amounts, but feel free to increase or decrease them based on your family’s tastes.
