Easy Peanut & Tree Nut Free Ice Cream Cake
My kids have never had ice cream cake. Mostly because all the pre-made ice cream cakes I've come across have peanuts or tree nuts in them (or traces of). This all changed one day. My daughter went to a friend's house for a birthday party and her mom introduced me to the easiest and most delicious peanut and nut-free ice cream cake recipe ever (thanks, Amanda!).

Easy Peanut & Tree Nut Free Ice Cream Cake
(You can also find dairy-free, gluten-free & egg-free modifications at the end of the post if you need them!)
After my kids tried the nut-free ice cream cake, they were hooked! The cool thing is that we had a family birthday celebration coming up. Honestly, I was kind of dreading baking the cake. I just didn't feel like baking. Which is why I'm so happy about this recipe. I changed the recipe Amanda gave me slightly by making it a cookie and cream variation.
Using the ingredients listed, this ice cream cake is peanut and nut-free. You can change it to be any variation you like, based on your favorite peanut and nut-free ice cream flavors.
*MAKE SURE TO READ ALL INGREDIENT LABELS BEFORE CONSUMING & CHECK WITH COMPANIES IF UNSURE SINCE INGREDIENTS CAN CHANGE AT ANY TIME.*
I've also come up with a couple of other modifications for dairy, egg, and gluten-free which I will put at the end of the post.
Here's a picture of the ingredients for the peanut and nut-free ice cream cake. Only 6 of them.
RECIPE NOTE 1: If you do not have Chapmans Ice Cream, try A La Mode, Straus, Righteous Gelato, or any ice cream that is safe for your family.
RECIPE NOTE 2: If you can’t find allergy-friendly ice cream sandwiches, you will need to adjust the recipe to include a layer of allergy-friendly cookies (Kinnikinik K-Toos are nut-free, or Sweet Lorens (flattened) or whichever ones work for your family), followed by a layer of ice cream and then another layer of cookies. Continue on with the recipe after that.
RECIPE NOTE 3: If you need to create your own ice cream sandwiches, you will need to add extra time for the cookies to soften up. Leave the cake in the freezer for at least an additional 12-24 hours.
Ingredients:
1 box Chapmans Vanilla Ice Cream Sandwiches, Peanut & Tree Nut Free
1 litre Chapman's Cookies & Cream Ice Cream, Peanut & Tree Nut & Gluten Free
1 family-size container of Oreo cookies
1 475ml container whipping cream
2-3 Tbsp icing sugar
2-3 Tbsp cocoa powder (use your favourite, allergy-friendly brand)
Directions:
Unwrap peanut and nut-free ice cream sandwiches and place them at the bottom of the 9" x 13" pan. Cut sandwiches to fit into small spaces to make sure the entire pan is filled.
Crush approx. 16 Oreos into crumbs.
Add cocoa and icing sugar to whipping cream. Whip cream until stiff peaks form.
Spread a thin layer of whipped cream on top of ice cream sandwiches (use about 3/4 of the cream).
Spread crushed Oreos on top of whipped cream.
Cover and freeze for approx. 1 - 2 hours.
Soften ice cream for approx. 15 min. Take cake out of the freezer and spread softened ice cream on top of whipped cream and oreo layer. Use wax paper or wet spoon to press ice cream to flatten.

Spread with remaining whipped cream. Decorate with remaining Oreo cookies, sprinkles or other safe candies as desired.
Freeze for at least 2 hours to set the cake. AND THAT'S IT! You now have an easy peanut and nut-free ice cream cake!

Dairy-Free Version
Try these dairy-free ice cream brands: Sacred Serve, Fronen, Oatly, Booja Booja, OR replace ice cream and whipping cream with So Delicious Cocowhip. Make your own ice cream sandwiches using your favorite allergy-friendly cookie plus So Delicious Cocowhip.
Another dairy-free option would be to use dairy-free sorbet or your favorite sorbet. This would give the cake a tropical flavor. Yum!
Gluten-Free Version
If you are looking for gluten-free, try replacing the ice cream sandwiches with homemade sandwiches using your favorite gluten-free cookie (such as No Gluten Oreo Cookies or Kinnikinnick K-Toos) and gluten-free ice cream. The Chapman's Cookies & Cream flavor in this recipe is gluten-free. For cookie crumbs, use your favorite gluten-free cookie like the ones mentioned above.
Egg-Free Version
None of the ingredients listed above contain eggs at the time of writing this recipe, but the companies do not list "egg-free" on the packaging. Please verify with the company if you have an egg allergy.
